This study is a single-center, randomized 2×3 crossover human trial designed to evaluate the effect of SugarLock® peanut skin extract on postprandial glycemic regulation. Healthy adults aged over 18 years with fasting blood glucose below 100 mg/dL and without type 1 or type 2 diabetes will be enrolled. Each participant will complete three test visits, with at least a 48-hour washout interval, while wearing a continuous glucose monitoring system (CGM). On each test day, after fasting for at least 10 hours, participants will consume either two peanut skin extract capsules, two white kidney bean extract capsules, or water only 15 minutes before eating white rice containing 50 g of carbohydrates. Postprandial glucose responses will then be continuously monitored for 3 hours to assess the effects on blood glucose elevation and glycemic fluctuation.
